On mine, I ran a 2" front spacer for about 3 months before my lift. It worked fine, truck still had a slight rake, but not anywhere near as bad as factory. 2.5" should get the front sitting level, but I wouldn't have wanted to add anything to the back, otherwise you'd keep the same rake you have now, or close to it.
Your best bet, forget the coil spacers to level your truck. Get the Bilstein 5100 adjustable front shocks. They have 4 settings you can put them at - most people set them at 2.8" which is the max setting. That will get the front up level, then if you need to you can always at a .75" spacer to the back if you feel it nessary. As things in the front settle though, it should sit pretty well even.
I'd recommend getting measurements now to see where you're at. On level ground, measure ground to the middle of the fender, front and rear. That will get you an idea how much you're off and what you need to get it sitting level.
As far as tires go, I can tell you the Terra Grapplers are nearly useless on wet roads so I really can't see them doing much for you on ice/snow. The BFG A/T are a pretty decent tire overall.
