Coming back to follow up, I ended leaving all of my stuff stock for now. I swapped out the water pump and used a 180 thermostat for now. I'm keeping this on the back of my mind, though. Thinking about getting a reader of some sort to adjust my fan kick-on points to a lower level.
With the 180 t-stat so are you seeing it go as low as 180 now? So fluctuating between 180-210 or so?

Yes, for the most part, the truck stays around 190-ish. That's highway driving between 65-80. The morning drive to work has been around 66F or so. For some reason, usually around the same point in my drive, the truck jumps up to about 215F, and then it seems like the efan kicks on and the temp drops back down to 190-195.
