Stock rim 17x8 how big of a tire can I run

I have a 2006 ram 2500 quad cab 5.7 hemi 4x4 stock height but I want to put a larger size tire on the rim. Was thinking of going with a 285/70 or 75 would like in put or even a suggestion of a different size to run. Thanks

285/70/17 is about the max

I thought some 2500s could fit 35s, or 315/70/17, stock.

I would think so, they're a 33.8" by 11.2" tire.
