I have a 2010 Ram 1500 TRX4 5.7. Looking to put a leveling kit on and go from 265 to 285. What issues will I be running into and do I need bigger rims or will the stock work?

No concerns.

Regarding the speedometer settings, get you a OBD2 dongle (OBDLink MX+ is the best one in my opinion, but it's $130.. the BAFX one on Amazon is under 30 bucks and works equally well for this particular task if you have an Android phone/tablet ) and also the app Jscan (android or iOS) ... takes under two minutes.

After the size change mine is off by less than a MPH against me.
Its not a set amount.. If its off by 1mph at say 20mph it may be off by by 4mph at 50mph for example... Your MPG and odometer will also be no longer correct.
I recommend getting a $15 elm327 obd adapter and the alpha obd app since there a lot more you can do with it later like program your own keys and allow led lights. Thats what I did.
I went from 265/65/17 to 295 /70/ 18 ... both sets were/are 4 ply nitto G2 tires my mpg went from 22 to 17... and highway mpg went from 34 to 26. just Bilstein leveling kit and 2" lift springs in the rear. I wish I would have gone with 33s thinner tires + better highway mileage but I upgraded to 9" rims which meant I needed wider tires... stock rims work with more 275- 285 sized tires.
