93 dodge ram 250 5.9 L overheating problem

hi guys i have a 93 dodge ram 250 with an 5.9L GAS engine, i just recently replaced the water pump because it was leaking, i let it idle in my drive way for about a hour to make sure everything was good. It was good the temp was in the middle and no leaks, so i thought everything was sound, but 1 day later i took the truck for a drive a it overheated and was spitting fluid out of the overflow tank so i added water and it cooled until it did it again a little later. so i thought it might be a bad thermostat being stuck closed so i took off the housing and i found the thermostat in 3 pieces in the block so i went on and replaced it and it still overheated, so i thought it might be a defective thermostat so i ran it without one and it was fine and after 20 mins the temp rose to high again?! so i did research and they said to bleed the cooling system via the bleeder valve but i didn't see one in my truck so i left the cap off the radiator while i ran it to let the air out i saw bubbles and then it started to spit all the water out, i heard that it means you have a blown head gasket (which i don't want) but the motor it running great no smoke and i took out the plugs and they are bone dry and not green and there appears to be no water in the oil, so what could it be????!! i love the truck and i want to figure this out so i can take it to work any suggestions would be great! Does the truck have a fan clutch? If so is it locking up? or just free wheeling?
