If I install a set on front set at 2.1" will I need an alignment afterwards?

Yes, because it changes the geometry of the front end. Doesn't cost much to get it done

I haven't had my alignment yet. Was told it wasn't needed with the shocks, but would be with spacer to levels.
I'm getting new wheels and then I'll do alignment.

Someone lied to you then. You most definitely do need an alignment with Bilsteins as you've changed the whole geometry of the front end. Right now your tires will be towed in and you'll have positive camber. You don't need to wait for new wheels for an alignment... it can be done regardless of what wheels and tires are on the truck.
