A rear leveling kit? Most of the time folks level the truck by raising the front to match the rear height...
If you just mean how do you fool around with the rear springs, all I do is jack up the rear of the truck by the differential using a floor jack, throw some big ol' jackstands under the frame, then lower the axle.

You dont need a hoist to do anything really...its just handy.
