Need help figuring out my 318 truck was down for a year due to trans got it back up and running cleaned intake new coolant oil everything just did spark plugs she's starting to chug and run way to rich confused on what might have happened

Start by checking your coolant temp sensor and o2s. CEL?

I have the upstream o2 to change out but its straight piped with no cat and how do you check that sensor?

Back probe the two signal wires look for near .5 v DC with engine warm. If not near that or at least between .25-.85 un plug and measure resistance if open circuit or resistance below 4 ohms~ replace.
Coolant temp- check for 5 volts in and anywhere from 1.5-3v depending on engine temp.

Okay I will try that thank you if that sensor is bad wouldnt my temp gauge not work tho?

There is 2 sensors. 1 for PCM ( 2 wire plug ) and 1 for your guage ( 1 wire )

Yes. A ton of things but but those two are most common. Is your check engine light on? Does it run OK for the first couple miles? Is it misfiring or just chugging or bogging under load?

My check engine light is on because of my o2 sensors and no cat it seems to be bogging under load mainly in overdrive without over drive its fine had a misfire but fixed that with the tune up

Well Id address the o2 sensors first. If you have a p0420 code for no cat or circuit codes for a missing sensor the PCM will not run readiness monitors so will not set additional codes for that system. So you could have a problem with a pre cat sensor but the pcm wont know and neither will you unless you have the ability to view your data stream. I hope that makes sense.

Check you air filter. A mouse set up house keeping when my truck was down for a couple of months. I cleaned everything out and installed a piece of heavy screen, or hardware cloth, in the intake near the fender. No mo rats in the filter assembly. Check your vac lines and wires. Rats will chew on everything.
