Magnum 318 efi swap to carbureted?

Im in the very early stages of swapping a 318 in a 2000 model 1500 manual trans from efi to carbureted. Like EARLY early, Like im deciding whether or not its a good idea. Im not a mechanic, Ive got a guy up the road that i trust that could help me if need be.

i have several questions

do i need non efi heads?
if i use the stock heads do i need to replace the injectors with plugs?
is it worth investing the money in a nice intake and a high performance carb if im not going to build the motor out?
how much of the stock computer system can i bypass and still have functioning guages & A/C?
most of all... in yalls opinion, is it worth it?

i HATE complicated machines. this truck shouldnt have near as many wires and hoses under the hood as it does. i want it to be as simple as possible. i would like this truck to function with no sensors if possible. i know i have to simplify the fuel system & i dont mind an electric fuel pump so no cam/timing cover swap. the motor runs fine but its completely gutless, like it cant really accelerate in 5th it just barely maintains 60mph. heaven forbid i try to pull my little croppie boat around with it. i feel like it could run better if it was simpler. i am on a budget but i dont mind spending some money on this truck as it is my dads and im sentimental about it.

if this isnt the right place to ask this im sorry. ive gotten so much help from forums like this one in the past but this is the first time ive ever actually been the one asking the questions. any help at all is greatly appreciated.

It is pretty much a "bolt in" job. You will be changing the intake to accommodate the carb so no worries there. All the other stuff is just nuts and bolts, nothing difficult.

Would the electric fuel pump supply too much pressure to the carb? Seems to me that the old style side-of-the-block mechanical fuel pumps generated only a few PSI.

If your truck doesn't run well now then something is wrong, throwing a carb on very well may not fix it anyway.

Carb swaps seem simple but really just leave you spending a bunch of time fiddling and trying to optimize as best you can just to get 12mpg, and having no idea what's wrong when something fails. EFI is more difficult to work on but once it works, it works. I'm working on a carb 305 to 6.0 EFI LS swap right now, carb swaps are dumb and I will die on this hill.
