I have a 2018 with 4.10's but have the 6 speed auto. I get about 12 with a mix of in town and rural driving (about 30-40 MPH). Highway I can get about 16.5-17. My fuelly is linked below. These are all hand calculated. I would think you might get slightly better than me with the 8 speed

^ I'm not sure you will see much better highway mpg with the 8 speed over the 6 speed? The final ratio is still pretty close so cruising in 6th(old trans) or 8th (the new trans) will be pretty close to the same.
I think the bigger difference will be in the towing and around town (getting the truck moving) performance between the 6 and 8 speed. The 8 has a lower 1st gear and closer ratio between 1 and 5. Once you get to 6, 7, 8 it pretty close to the same ratio as 4, 5, 6 on the old transmission so highway cruising will be about the same I think.

My 2019 with 6.4 and 3.73's just rolled 6,000 miles. I did a trip from NH to VT and back, so not exactly flat. I maintained 68 mph on the highway; the front is lifted 2" with stock size General Grabbet ATX tires and the computer said I got just under 16 mpg. I had about 180 highway miles and 60 miles of back country roads and this includes the truck running for about 10-15 minutes in a parking lot to keep the AC on for my dog while we went into a farm store.
You won't see 20 mpg unless you're getting a diesel.
I suspect my mileage will go up slightly, but even so, my 2016 Ram 1500 with 5.7 and 3.21 rear with the front raised 2.1" and 34" tires got 17-18 mpg on the highway, so adding 1500# in weight, a taller truck, and far more capability, I'll deal with the fuel economy. I'm hoping I'll be able to eventually get 17 mpg in this truck.

You’ll see 14-16 in everyday driving. I once got 18mpg on an all, slow highway trip (once). 8-10mpg towing anything with a flat front regardless of weight.

And remember, the 6.4 is happiest with 89+...

You’ll get better mpg with the Cummins but you’ll pay for that up front, in maintenance, and down the line repairs... either way, you’re going to pay...

My 717 hp hellcat gets about 12 city, but my wifes pasifica v6 9 speed gets 17, honestly 12 city isnt bad for a big heavy truck.
I have driven i4 imports as rental and gotten 9-10 because they are so under powered it requires heavy foot to be slower than my 5.7L so honestly city isn't going to be good except prias.
