I have read a couple of threads that a 285/75/17 will fit on stock rims for a 2011 ram 2500 without rubbing. Has anyone done this? I need more convincing.

I've seen Ram HDs with up to 35" tires on stock suspension. Your wheel must be a 17x7.5 if it's an ST or a 17x8 if it's an SLT or higher trim. Therefore a 285 tire would be no issue regarding width. The tires you're looking for are almost 34" tall, hence no issues regarding rubbing either.
