i have exact truck 2011 5.7 w 545rfe and 180 stat and clutch fan delete and replaced w v6 fan.
i have diablo 2 tuner and run fans at 190 degrees all settings
my trans temps are really low compared to that 135 to 145 degrees
i run royal purple max atf which helped lower temps and always keep radiator clean as well as trans cooler that in ac unit in front of rad and behind power steering cooler
i bought doorman trans pan for 35 bucks w drain plug and swapped it when i did spin filter and sump filter
if u haven't done that device u should great vids on u tube
