What exactly is done to the transmission/differential on a 2WD 2019 Ram classic? It is a sealed transmission so does the fluid need to be changed? Recently I have experienced a little delay in first gear.

Sealed transmission? What do you have? Normally trans will be a fluid change, and I think yours has 2 filters but maybe just one, idk but that changed as well.
Differential is just a fluid drain and fill, 5 min job.

It's not sealed by any stretch of the imagination.If it was it'd blow every seal in the transmission,it's vented to the atmosphere the same as every other automatic transmission is.
ZF reconmends changing the fluid in the 8 speeds,between 50,000 and 80,000 miles or every 8 years.
Do a search,there's multiple posts about changing the fluid in the 8 speed.
If you decide to save some money and do it yourself,here's the truck specific instructions,pay attention to the very first highlighted paragraph,the rear tires need to be roughly 9" in the air to level the transmission.
