Check engine light on apparently due to engine coolant sensor per Autozone. Replaced sensor and 2 days later check engine light on again. Same error code. Anyone have an idea what may be the issue?

It is likely the float inside the coolant bottle that has gone bad. I know on the 2500's it is a common problem. You have to change the coolant bottle for a new one. This video will show you how to check the sensor: https://youtu.be/gB0-2aMFcZ0?si=02LREd_sGyeaDW4n But more than likely you'll need tot replace the coolant bottle.
