Did exactly what you suggested and no trace of colds air coming into the cabin..........no clicking either from the HVAC motor and doubt it's damaged.

OK, at least you know it's probably not unwanted air coming in.. Did you ever say what your engine temp was running at?

A common stat temp is like 192 or 195. If there is one that is 195, that's probably what I'd go with. It gives you a little head room for summer, yet puts your vehicle right there in the sweet spot temp wise.

I've got a diesel car with a 196 stat I put in like 2 months ago. Using a snap-on scanner that is providing real-time readings, I can see it get up to 204 for periods, but usually it drops down to 197-198 . I think I've seen it get up to 207, the max. Amazingly the needle stays at the same position the whole time weather it's at 190 or 206!
