I put stainless steel headers on my 4.7
The shop says the stainless expands too much and they can't stop the leak what's the best shorty headers

I'd try some better header gaskets & some Stage 8 header fasteners first.

I think Remflex 6001 is the gasket for your truck, I'd use that and some good bolts, I don't see ARP listed for your engine. The Stage8 had some reports of the locking tabs causing knock issues, no personal experience on that though.

You didn't really specify where the leak is occurring which means our advice is kind of limited.

I would find another shop. There are literally thousands upon thousands of people running stainless headers and this one particular shop says they can't stop a leak? Find another shop.
