Issue with Limp Mode at downshift

Hi all. I deleted my 2015 Ecodiesel at 150K miles and have 180K now. A couple of connectors I couldn't get to (rather get disconnected) during the delete and I just cut the wires. One I cut and the sheeth pulled off and left 4 wires exposed and hanging down and rested along the drive shaft, pretty sure it was the rear Nox sensor. Anxious to see if the delete and tune "worked" I jumped in the truck and drove it down the dirt road I live on. For the first 2 minutes at normal speed everything was great, then I punched it and the engine lurched heavy, power dropped off and the service electronic throttle message came up but was blinking crazy on the dash. When I slowed down it went away and things returned to normal. I remembered the wires hanging against the drive shaft and was confident that spinning shaft was generating some current that the wires were picking up and that somehow I cooked something in the ECM. Drove home, trimmed the wires, didn't seem to have the problem any longer. Flash forward a couple of months and I get on the truck pretty hard and climbing onto a freeway ramp towing my tractor and boom, same issues happens. I slow to a stop on the shoulder, shut the truck off, restart it and everything is great until I go to pull back out and give it a good amount of pedal, boom, same issue. Pull over, restart the truck and do a nice slow gradual acceleration back into traffic, no problems. Then another time shortly after same issue but without the trailer in tow. I figure out it's on the downshift climbing or towing. I thought maybe I had screwed up the throttle position sensor so I replaced the pedal, not the fix. Anyone heard of this issue or any ideas? I pull over and restart teh truck and no issues. I just need to feather it up to speed and it happens nearly every time under heavy acceleration, especially when towing. I sent an email off to the guys I bought the delete kit from asking if they'd heard of the issue before. They didn't bother to reply. I'll give them a call as well but was hoping someone might have come across this. As per teh usual arrangement I apologize if another thread covers it. I couldn't find it with the search. Thanks in advance.
