My truck came with 33's stock it looks like 35's would squeeze in there with just a leveling kit.

That's exactly what I did. I went with the leveling struts though instead of the HBS leveling kit. Initially I bought both and sold the HBS kit on here.

Have any issues with it set at 2.8? I was going to set my new bilsteins at 2.1 until I read about the Outdoorsmans already having a . 7 lift stock which means I would only get 1.4 difference at 2.1 setting. Now considering 2.8 but worried about ball joint issues.
