I just got a 2003 2500 and want to level it out. A quick search has gotten me confused. Why is there a variation of 2" and 2.5" leveling kits?

Its goes even beyond 2" and 2.5". I have a 3". Bilstein 5100 shocks are adjustable from stock ride height to 2.8" and a few inbetween. Its personal preference on how much of the "rake" you want to take out of the front end. Personally I recommend, and I know a few guys on here do as well, the Bilstein 5100 adjustable shocks. Gives you the level and better ride quality.

Even on a 2500 Cummins platform? I've heard of people doing that on their light duty trucks but haven't yet heard of that on the 2500/3500's

No! As far as I know and have seen, they don't make an ajustable ride height shock for the 2500/3500. They make 2", 2.5", 3" coil spacers, 2.5" and 3" aftermarket coils (Carli, Thuren etc) because not everyone wants a level ride, some still want a slight rake...they give you Options to chose from.....
3" will put you completely level, but may look slightly lower in the rear if parked on an incline. 2.5" seems very common. I plan to go with either Carli or Thuren + longer shocks when I am ready to do it all....

I need shocks and this is my plan to eliminate the rake while I'm at it. If I use the adjustable 5100 to gain 2", does that change the geometry in any significant way? Will the handling change?

I have a 2" level on a 05 2500
I measured from the center of wheel to the lip of the fender in the front and back and 2.5" would have put me nose high

Even with 2" spacer I look at it a lot and it looks nose high and have thought about doing a 1" block in the back

I'm hoping to get a set of thuren coils now soon and add a 1.5" block in the back

3rd and 4th gens use an entirely different suspension. You can't use an adjustable shock on an HD truck
