This is my first time buying wheels for a truck and need some help. I have a 2016 2500 Tradesman with 18” wheels. I did do the 2.5” front leveling. I’m looking at 18” Helo HE879 with 5.71 backspace and -12mm offset. I want to run 35” tires and want to know will I rub and how far could my wheels stick out the fenders?

You'll be fine. Here's mine with -18 and 35's. 2" RCX Level No rubbing whatsoever.

I’m running 33x12.50s on a 1.5” level with no rubbing on my ‘06. -25 offset and 4.5” backspacing. My truck is very different tho

Give custom offsets a look. Theres a lot of trucks posted up and you can see their specs and how much rubbing they ended up with. Looks like a few are running 35x12.50s without rubbing in the -19 to -25 offset range. -12 is pretty close but you might get lucky lol
