Removing cats 2014 5.7 ram

I'm need some advice, cats are clogged, I believe. They are only heating up to 900 to 1000 degrees, also put it on a scan tool and my downstream O2 sensor is constantly fluctuating . Truck will only run for 20 minutes until the truck is warmed up. Then truck will start sputtering (sounds like a diesel) then dies. Ive just replaced the head gasket, spark plugs, injectors, cam shaft(and rollers),push rods, tons of sensors,and machine cylinder heads. Long story short ive spent a fortune on this truck bc it's PAID off. the mechanic that did the work is 100 miles away, and he is willing to fix it for free. I was wondering if I remove the both sets of bolts from infront of the cats, would it allow the truck to breath so that I can drive it to the shop.also any further advice would be great I've spent way to much time and money to trade this truck In for another car payment. Truck has 270,000 miles btw and it's throwing no codes.

plugged cats will not always through a code. i would unbolt them and see how it drives. if it drives fine then there is your problem!
