I wanted to check if would be possible to swap my 2011slt 1500 5.7 dash harness for a 2015 harness so I can install the bigger screen and the premium cluster

Unfortunately no, a major change was performed in 2013 that makes this mod not possible in earlier 4th gens.

As @jawzs2 stated, the changes made in communications would require not only wiring but so many changes as to make it entirely impractical to try to do this with parts swaps as nearly every module in the vehicle would need replacement resulting in it being more practical to update vehicles then to chase compatibility.

I'm sure you can find an aftermarket solution that will satisfy your wants of a larger screen but I'm unfamiliar of the cluster options on the 2009-2012 Rams (but you'd have to work within that range for a cluster upgrade). Many seem to be happy with these Android radios...
