The condition that's described is typical of air in the cooling system. Be advised that it is not easy to ensure all of the air is out of the system in a 5.7. A cone adaptor and vacuum generator is required. I would recommend consulting a service manual. You may be throwing parts unnecessarily at the symptom.

mine 195 thermostat was sticking in june ! so did 180 so reads 195 when 100 out side ! biggest thing I need is to replace to electric fans soon for cooling little ac fan doesn't do a lot for cooling and idle it sucks ! lucky the v-6 fans well fit no problem ! and have a turner set at 190 to turn fan on ! oh I remove the ********* engine cover for cooling was soooo dang hot u could fry egg s on it !
