Remote head units are the best, then you only need a spot for the face. Body some where else.

Your talking about this drawer?
I know it’s not a 2 way radio but that spot is where I mounted my switch panel.

I can’t remember for sure but you basically have to remove the whole center stack dashboard to be able to remove the screws that hold that drawer in place. There is not a lot of room behind the drawer though. You basically have the depth of the drawer to work with.
Like others have said remote mount radio would be best. You could definitely mount the remote head in that drawer. As long as it fits height wise.

I've got a 2017 Tradesman without the little drawer cover (mine has a useless console on the floor). The area where your cover is has a shelf about two inches high in the back. I've been thinking about removing mine. Found some YouTube videos about AC stuff and it appears that you have to pull the bezel around the radio (two torx screws and several push clips) then there are a few screws around the lower part.

I have been messing around with mounts / radios for some time in the truck. You might have seen a metal bracket going around to utilize the bolts beneath the sun glass holder. I made a few wood brackets.

I have posted some images in the media area of my profile. I have tried to link to them, but obtain a spam pop-up.
