2015 5.7l. Need some help on a few issues!

My 2015 5.7L ram is having a few issues right now.(60,000km) Here it goes:
On 2-3 occasions my temp gauge would sky rocket instantly only within 5 min of driving. (Not up to running temp yet). This would only happens in the winter -30C. I took to the dealership to have it check out and no codes so basically they said there is nothing they can do. I even took a video of what it does. I think it’s a temp sensor and they would change it but I’m not a mechanic.

2) I am starting to get the hemi tick. On cold start ups seems to be a making ticking sound for 5-10 seconds. If truck is warm it will run fine. From what I have researched, some say it is normal others claim it is exhaust manifold bolt, lifters, oil choice.

Any help would be appreciated. Especially on how to go about it with the dealership. To have the issues fixed. I’ve tried numerous times to have the temp sensor changed just in case and I get the run around. I am thinking the newly occurring ticking is gonna be the same.

1) i had this issue with my 2015, stop and start truck again cleared the overtemp. after a few times I retune the truck (same tune) and it never happened again. If you're not tune try to unplug the battery for a few minute this resolved for me a transmission not going further than 2nd gear and a false rear blown indicator light.

2) you will have to investigate, the manifold should be cover by the powertrain warranty so have it look at.
