Fuel gauge cluster light bulb is probably blown. Cluster would have to be removed and the bulb replaced from the backside.
For the mirror defroster , are you saying the indicator bulb that is built in to the switch is out? That may require the switch to be replaced unless it can be disassembled and swapped out.

No big deal to me but could vary depending on your abilities. I'd search YouTube for a video on how to remove 2012 RAM cluster.

These guys above have a video on removing. If it has integrated bulbs or LEDs you'd have to get it repaired. You could also swap it out for a working one but then you'd have to program in the correct mileage.
