I'm trying to install bed lights on a 2007 1500 5.7 hemi. Not sure if I should give it it's own fuse, run it off of another fuse, or solder the wires directly on the always-hot power outlet in the interior

Any time I add on any type of electrical accessory, I give them their own fuse and relay setup. The fuse will supply the power but the relay will carry the load of the lamps.

Just be careful and know what your doing because these can bus systems are very finicky.
