I have a 2014 3500 ram 6.7 diesel. 157,000 miles. So recently I pull my 5th wheel rv with a jeep in tow behind rv from Kansas to Colorado. Engine cooling temperature seemed high across western Kansas and going into Colorado, but not alarming. As I got into mountain and steeper climbs the coolant temperature rose dramatically the steeper and longer the climb. During climbing temp hit 235 plus. As I defended it dropped rapidly. I also saw an oil temp of 230. This seems to high to me. I don't notice large swings in temp running normally not pulling in mountains. I have flushed the radiator and coolant system and installed the bypass mod around transmission t-stat. I have pulled in the mountains before and don't remember these kind of temperatures. Any thoughts or experiences would be appreciated. I'm contemplating on changing fan clutch and or thermostat.

Have you ever changed out the coolant or checked the radiator cap? IIRC the coolant used back in 2014 had a 5 year coolant life where the newer OAT coolants have max of 10 year or 150,000 miles life, also when you do change it make sure you only use 50/50 mix of coolant & distill water if you buy concentrates coolant, never top off with tap water unless you have no choice, then as soon as possible flush the system and refill to get rid of tap water in you system. And yes it may be a good time to change out your T stat with one from Cummins not aftermarket as they don't work as well as a Cummins stat.. jmho...
