Cooling issue

Hello, I have a 2019 Ram 1500 Laramie 5.7Hemi 4x4. I have recently swapped out the OEM radiator for a “Cold Case” all aluminum radiator with a 180 degree thermostat. Runs good no leaks (looks real nice) lol. But now in the afternoon/evening driving temp gets up to 226/228 while idling and then drops to 215if while driving. Everything that I have read I should be anywhere between 185-195 with my new set up. Could my thermostat be faulty and should I replace it? Should I also replace the temp sensor? Has anyone ran into this issue?

Looks like electronic fans? I would verify that they are kicking on.

Thermostat definitely could be bad, very large percentage of them anymore are trash. I'd take yours out and put it in a pot of water and slowly let the temperature rise with a thermometer in there, see you when yours opens.

Did it start doing this right after the swap or did it work good for a while?

Next day after the swap. I installed the new radiator, hoses, thermostat, and fresh coolant this past Saturday. Noticed the 226 temp Monday coming home from work. And did it again today. Never goes past 226 though. Got home and checked the thermostat with my temp gun and it read 218. I got a new thermostat and a new temp sensor. Am going to install this weekend. Just wasn’t sure if it might be something else

Always check a new thermostat as stated above before installing it.The odds of getting a good thermostat these days are lower then the odds of getting a dud thermostat.Also just because it tests good today,2 days or 6 months from now doesn't mean it'll still be good.If you have a well functioning thermostat these days,alot of times you're better off reusing it,as you could go through several new thermostats before you find one that's actually good.
The days of buying a new thermostat and it being good for 10 years are long gone. Odds are your temp sensor is okay,and your new thermostat isn't

You could still have some air trapped in your system as well. After I replaced my radiator, it took 8 or 10 times rechecking it when cold and adding a few ounces of coolant each time to get it completely full.

Sometimes, pointing the nose of the truck on a good uphill tilt will help get rid of air pockets.

As @Wild one stated, thermostats are a giant crapshoot any more, check them on the stove to verify operation.
