My 2016 1500 3.0 ecodisel is not using its DEF gauge been reading 100% I've filled up 3 times please help

DEF consumption is approximately 1 gallon per 1000 miles (unless towing heavy). Your 3 fills are around 1k miles. Give it some time and more miles.

Drive at least 1000 miles, it may move a bit, if not drive another thousand

i don't even bother adding DEF until my truck gets nearer to 1/4 gauge

Your DEF tank holds 8 gallons
If your tank was close to full, i think that you could drive from your area to NYC & back
