I rented a 2023 Dodge Ram Classic

The instrument panel is glowing brightly with a moon white shade around the edges of the instruments, red needles for the gauges, and a dull but visible backlight in the center screen.

The headlight switch is in AUTO or OFF state.

The dimmer switch is all the way to the left, which is low or off?

How do you get this to turn off while the truck is sitting overnight?

It’s on a timer. The length of time the dash remains lit can be changed in settings. It’s probably set for the max length of time. Leave the light switch on auto and forget about them, they’ll

The dash lights are on a timer. The length of time they stay lit can be changed in settings on the infotainment screen. They’re probably set on the max time. If you open the door the timer restarts. You’ll also notice they dim/brighten separately from the headlights turning on/off. Leave the light switch on AUTO and forget about them. They’ll take care of themselves.
