Recently replaced my AC ccondensor meaning I dropped the dash and steering wheel. Disconnected battery, Popped off the brake sensor on the brake pedal counter clock wise. Upon putting everything back together, truck starts but now cant get out of park and key doesnt release out of key cylinder. Doing research it may be a faulty brake sensor. Noticed that the sensor doesnt really depress or extend beyond 1/8 ". On youtube new ones have a hell of alot more play. Anyone have a guess on this?

That would be my guess. I had that problem on my daughter's VW Golf when the brake switch went bad.

Had a pin not fully seated in my harness to the brake pedal and it locked in park on me. Once I pushed it back in it worked fine. If not the sensor I's check the harness to see if you snagged a wire pulling the dash.

Convert, for now.
Engine
small
Try starting it, put in gear, move the truck a little, and shut off again. Sometimes if you do too fast, its gets weirded out...My old truck did it a few times. Worth a try

The truck starts, but it cant get out of "Park". The key fob will also not turn all the way to the off position to pull out of the cylinder.

My truck will not shift out of park if I don't step on the brake pedal. When I do I can hear something move under the dash that allows shifting out of park.
There is something called the BTSI. Brake-transmission-shift interlock. It might have become disconnected when you dropped the dash.
Here is a link to a video of how to unlock. Hope it helps.
