Are you noticing any unusual coolant loss?
Don't leave out the possibility of one of the new parts being defective out of the box. Working in parts, I've seen it happen a few times.
When it over heats, does the temp just continue to rise till it's hot or jump up all of a sudden?

Welcome to the site.

As stated above those parts can be bad.

Make sure you dont overheat it, 4.7s are know for warping the heads once they get hot.

welcome to RF!
thermostats are notorious for being bad out of the box. also could the thermostat be installed upside down?

Air in the system, Bad radiator cap, Bad T-stat. Those would be my first 3 spots to check.

Easy and old school way to check the t-stat is to pull it out and put it in some boiling water to see if it opens by itself
