Can my 2021 5th gen on stock ride height pull off a set of 22x12 -51MM on 325/50 tires?

Tire-
  • 325/50R22E (35"X12.75")
  • FUEL GRIPPER AT ALL TERRAIN TIRES

Tire dimensions vary by brand even with the same size.
if you have a specific tire in mind, look it up on Tire Rack and they'll give you the exact circumference for that particular tire. For example, my Cooper Discoverer AT3 XLT's in 275/65-20, up 5% on the aspect ratio measure 34.2" in diameter. They fit fine and only just kiss the front stabilizer arm at full lock in parking lots with no marks on the tires.

According to Summit Racing, Fuel Off-Road Gripper in the 325/50-22 size are 34.8" in diameter. I don't know your stock tire width but at 325 plus 34.8" in diameter, I'm going to surmise with stock wheels you are going to experience some rubbing while turning. Perhaps a wheel spacer could minimize the rubbing. Just my 2 cents.
