Temp over thermostat

I changed my thermostat to a 190 maybe 5k ago but i noticed it runs hotter for no reason I can tell. I figured it had some other temp control so I just let it go.

I just did a 40 mile drive empty and watched it. It ran anywhere from 188 to 212.

Is this normal? Do you think I have a bad thermostat?

I was running a jet 190 in my truck. Temp would climb to 203 which was factory and would cool back down to 195 usually. You need to get tuned for the electric fan to kick on earlier. Also have you removed the active grill shutters? I ran that tstat for about a month and switched back to the 203 because I was having issues with my ac not staying cold and I am trying to see if it was related to maybe the fan not kicking on.

I had the Jet 180 in my 2013 and it ran at 185 consistently, unless I was racing.
