What is the thoughts on which thermostat temperatures to use. I know stock is 195 but there is everything from 160 to 195. Is there any advantage to lower temps?

I think it depends on where you live and how you use your truck. I live in So. NV and when I first got my truck and towed my trailer during the summer in 110+ degrees it would often reach 210-220 degrees, too high for me. Got a new rad and 160 t-stat and it worked great in summer but never got very warm in winter. I've gone to a 180 t-stat and it is a great compromise, warm enough in winter and very rarely reaches 200 degrees even towing in the summer.
