Safe trailering is 10-15% of the total weight on the tongue. You need to be careful that you don't under load the tongue by shifting weight too far back on the trailer.
What will happen of there isn't enough tongue weight (less than 10%) is the trailer can start to sway back and forth making it hard to control. If there is too much tongue weight (more than 20 %) than it can throw the back of the truck around and put too much stress on the tires.
With the 8k load I was going less than 15 miles and very low traffic areas and at 60 it wagged some I just didn't know exact weight and didn't want to crush my truck by putting it to far forward. I rather drive slow than crush my truck personally.
As far as cars go most are between 3-5k and leveled is perfect never wagged with a car before.
Edit: I will add over loading the tounge can result is worse sway (imo) and also cause you to have reduced brakeing and steering.
Not taking anything away from you because everything you described is accurate but sometimes other factors come into play.
As you see in the pic the there is more load over the front tire but it's still mostly centered it really pulled fine wagged couple times after few big bumps I grabbed the slider steightend it out and slowed down some nothing even close to out of control. Now I can tell you I wouldn't pull that load 50 miles down a major interstate.
