The 2019 Ram Classic 1500 2WD can be towed behind a motor-home utilizing a dolly. Just have to back on to the dolly so the rear wheels are off the ground and secure the steering wheel so as to keep the front wheels straight.

Has anyone done this? If so, any reason not to ?

It will be a lot of stress on the steering column/rack holding the wheels straight and if it moves the steering will go hard over as the steering geometry can't self straighten.
The correct way to dolly a 2WD is to pull the driveshaft. Look at getting a flatbed car trailer if pulling the driveshaft is out of question. The 4WD can be flat towed as it's the transfer case that gets put in neutral.
