Just bought a 5th Wheel (~16K lbs) and when I pulled it home I kept getting error messages on EVIC. One was "Check Trailer Wiring" and the other was "Trailer Brakes Not Connected". I have unplugged, replugged, turned off, restarted? We had fifth wheel hitch installed after market and had plug moved to bed of truck as well.

Sounds like maybe they weren't careful, or didn't know what they were doing while wiring to the bed.

Sounds like you have a bad wire on the truck. From when it was moved. Or a bad wire in the trailer somewhere.

Trailer worked great for the individual we bought from, it's in immaculate condition. Any thoughts on it being a grounding issue? Because even though the error messages were coming in and out the brakes did work.

It's gotta be from when they moved it to the bed/added 1 in the bed a wire it's probably loose or bad ground. I would take it back to who you had install it and let them fix it.
