There is no issue with the fitting taking grease.
And it's an issue with every newer fitting.
Does the grease gun go on and off the zerk if you don't try pumping any grease into the zerk.
I have a feeling the bushings aren't actually taking any grease, and you're pressurizing the coupler to the point it's hard to get back off the zerk fitting.
If you've been using a petroleum based grease for a few years, the bushings could of swelled to the point they won't take grease anymore.
I'm guessing you've been using a petroleum based grease,as you're not telling us what grease you've been pumping into them.
Did you try using the grease gun on something else,if it works fine there, then there's nothing wrong with the grease gun or the coupler, and if the coupler goes on and off the zerks that are giving you trouble,with-out pumping any grease into the zerk, then it's the actual bushing that's not taking grease, probably cause it's swelled to the point it won't accept grease anymore.

Again, it's almost every newer fitting, regardless of whether it's a bushing, ball joint, u-joint, or tie rod.
I notice that older zerks are pretty round, newer zerks have a ridge towards the bottom side, shaped a little more like a bell then a ball.

Maybe you can releave the part that goes over the zero.
A file or even the right size drill , applied in the right way , might provide some extra space for removing the coupling.

Clean up one of these zerks and get a few pics of it.I haven't bought a zerk in a few years,so maybe they did change them.

You can see the edge on this one. I know it doesn't look like much, but something is jamming my gun on there.

Does the gun go on and off easily if you don't pump any grease into the zerk> When are you gonna tell us what grease you've been using, you sure seem to be avoiding that question

Currently everything is greased, I'm not going to crawl under my truck again until next summer. Then I will try on and off, without greasing.

one time I bought a air operated Lincoln grease gun, should have been a top of the line, but it was a pita, it was like this.
if it built up pressure in the fitting, bearing, you needed to unscrew the grease gun coupler a turn or two,
If you got pissed and yanked hard, it could break the grease zerk,
then you usally ended up on your butt on the ground.

I hardly ever used it, just went back to the old manual ones that always worked good.

Not what i'd use on poly bushings, but it shouldn't cause them to swell as bad as a petroleum grease would.
I'd buy another gun and dedicate it strictly to a silicone grease for your poly bushings
