Will the bed from a 2008 RAM 2500 fit on a 2003 RAM 1500?

I would think it should, they are both gen 3 trucks. But I have never swapped them personally so can't say 100%.

Yes. You may run into body line differences at the bottom.

2001 1500s was an out going body style year
2002 1500 was the new body style

In 2003 was the new body style for the HD Rams, they kept that body style until 2010

You will want to actually see the bed that you are thinking about buying.

Around 2007, they had Regular cab, extended cab & quad cab
so the length of the beds may be different

Not quite. 2006 to 2008 had reg cabs, quad cabs and megacabs (on HD frames but same body panels and beds). The extended cab went away with the 2nd gen.
