My buddy does the same thing with his Cummins. He tows 2-3 times a week, so he leaves them out.
I don't know about the Cummins, but my neighbor's dad has a 6.4 Powerstroke, and he left his mirrors folded in for a 3.5 hour trip and he said he got about 1.5-2 mpg's better than normal. And I mean folded up to the cab like you would when you park by other cars.
