1995 V10 stumble 50-60mph

Have a 1995 dodge v10 and stumbles/loses power 50-60 mph. I am stumped on this.
fuel pressure is 39 PSI, all data suggests 35-45psi
Bought truck and had a check engine light, replaced both O2 sensors and have not had check engine light since.
When I bought it did a tune up and did plugs, coils, wires.
Air filter is new, and recently installed a new idle air control valve and throttle position sensor. Took MAP sensor and gave it a good cleaning but still having this issues. Gets worse when warmed up.

Catalytic converter?
Fuel Filter dirty?
Fuel Injector?

I had a similar problem with a 318 V8 years ago, turns out one of the new plugs I put in must have gotten bumped because the gap was only around .010" instead of the .035 or so it called for. re-gapping it fixed it right up. Check the ignition wires as well, one may be shorted out on the engine if it is touching something hot.

Not yet. Truck still in the shop, shop adjusted the air and fuel adaptions. Picked it up and still had same issue. Still at shop going on 3 weeks and they haven’t been able to find anything. Will update
