I justed purchased a 2004 dodge Durango and it has the plug wires that bridge to the otherside. Why and can it be eliminated and run just the double coil pack per cylinder.

Because that's just the way it is lol. You have a 2007 Ram so you never saw under the hood of an 03-05 5.7....that was the early factory ignition system geared toward emissions. They figured out it wasn't worth a **** and got rid of it in 06 (even the LX cars with 5.7 had that setup). Yes, you can get rid of it, but you'll need:
1. 06-08 style valve covers
2. Full set of 8 coils
3. Either hack off and resolder the correct connectors (they're different) or get the pigtail adapters

For example, this is an 05 Magnum 5.7 with the pigtails to get rid of the spaghetti mess:

Don't waste your money on aftermarket coils, they're not worth the expense. I sourced mine on ebay, covers and coils. Deals are there to be had. Also I don't think you can get the pigtails there, I got mine from Muscle Motors; I think 3rd strike performance has them listed but they get them from MM anyway.
