I looked at prior alignment posts and couldn't find the answer to my question. A few weeks ago, I had my truck leveled with Bilstein 5100's and alignment done. I was trying to coordinate new wheels/tires at the same time, but that didn't work out. In the next few weeks, I will be going from stock 20" wheels/tires to 18" wheels with tires of same overall diameter. Will I be able to get by with the alignment I just had done or will it be necessary to have it redone due to the wheel/tire change?

No your alignment will stay the same. No change is required as long as you already had it done after the Bilsteins.
