Mysterious coolant loss

I bought my 2021 Ram 2500 6.4 L Hemi last year with 50,000 miles on it.
A month ago I experienced an overheat situation check the coolant reservoir and it was an inch and a half below minimum had the truck towed in my mechanic changed the thermostat they pressure tested it everything seem to be fine, here I am again today with the same issue.
I open the hood to find it was again an inch and a half below the minimum so I topped it off and it's running fine now but I can find no leaks anywhere no hoses no spray nothing on the ground.
About every other week I would get out of my truck in the parking lot and I thought I smelt antifreeze for a second I'd open the hood but I could smell nothing plus I was also on a parking lot filled with trucks so I had no idea if it was mine.

One guy in this form had a leaking EGR hose underneath the intake that was evaporating does anybody know it was just a common issue with these motors?

Any help would be greatly appreciated.

Pressure test the Hell out of it. Pump up the tester to ~20psi and watch closely. It should hold steady.

The intermittent coolant smell seems to be 'normal' on many of these trucks. I have same issue with mine, but no leaks. The coolant fill tank is not sealed, it's just a crummy plastic snap-on cap, so coolant vapors can escape easily. Every once in a while, I park in my garage, then notice the smell. But not all the time.
