Oil temp dropping

Truck used to ride empty not towing anything with a coolant and oil temp of 188 plus or minus a few degrees with a trans temp of 168 but was coming back from a 4 and a half hour drive stopped somewhere turned truck off for a few minutes and then was back on the road had to accelerate pretty quickly and then all of the sudden got a check engine light went to get it checked was a p0111 code saying the intake air temperature sensor was bad so I replaced and cleared the code now the truck is showing a coolant temp of 188 and a trans temp of 168 which was normal but the oil temp will only hit 183 and then just drop instantly to 167. Anyone got any guesses???

Everywhere I’ve read the oil temp is calculated there’s no actual oil temp sensor the temp is calculated based off of other sensors
