I’m going to be putting a dash mat on and I know it’s gunna irritate the crap out of me when the colors don’t match so I just figured I might as well make it look somewhat normal

What parts of the interior? Don't bother plastidipping pieces with texture. If you screw up and need to remove it, GOOD LUCK. Smooth only
