So on my single cab the screws that hold on the "oh **** handle" spin in place with the metal tab that has the threads for them. Anyone know where I can get some more of those threaded tabs to put new screws in? Also any ideas how to remove the old ones?

I was thinking of grinding them off then drilling them out or use a punch and knock them inside the pillar

Maybe hold downward pressure while trying to take them out?

Tried that, started to bend the A pillar where the bolts go. My worst case scenario is remove the windshield and cut out a pillar from another truck and weld it in place. But I would like to avoid that

If they are just spinning, try re-cinching them.
Use a bolt and a nut, thread nut on to bolt, thread bolt in to a pillar.
Hold bolt while turning nut to make tighter on a pillar.
