Tire help needed!

Need some advice on tires. I have a 2016 2500 6.4 Hemi 4x4 Mega Cab. Going to upgrade wheels and tires. Going with 18" wheel and want 35" Toyo RT's. So I go down to Discount Tire asking for a 35 12.5r 18 tire. The salesman wants to sell me a 295 70 r18. He says the Toyo 35 12.5 is an E2 rated tire with a max psi of 65 and a weight limit that is below the factory recommendation for our trucks. So he is offering the 295 70 tire that is an E1 with a max psi of 80 like the stock Firestones.
I call a local off-road shop and they will sell me the Toyo 35 12.5, I call Discount tire back and he will sell it to me but he says no warranty or tire rotations etc because he's not able to sell a tire below the factory recommendation.
So I'm curious what you all are using and if I should go 295 70 route or 35 12.5? I mostly drive unloaded, I occasionally tow a 5000lb boat but that's it. Should I stick with E1 and run it with less pressure or go with E2 and not worry about it?

the tpms would probably drive me nuts, and the narrower tire would be better for fuel economy. those two things would swing me to the 295/70/18's personally.

295/70/18 is the way to go in my opinion mainly due to fuel milage
